Healthy Peanut Giveaway!

One of my favorite mottos is: Change is Healthy πŸ™‚ And right now, there is a lot of change happening!

A new year is coming up. 2011!

I am officially moved out of my little house in Athens!

My sister Kay and her husband Tony are have a baby!!!!!

It was a BIG Christmas surprise! They just moved into their house too! Perfect timing πŸ™‚

And I have made a few changes to the blog!

An updated name, a recipes page, and a new domain: healthypeanut.com!!

To celebrate these changes and continue the season of giving, I am having my very first giveaway!!!

For Christmas I gave my sister a candy thermometer so we could make marshmallows! Something we have always wanted to do!

They turned out so light and fluffy, we were blown away!! These have totally ruined all store bought marshmallows for us! Good thing they are not too tough to make!

Homemade Marshmallows

  • 3 1/2 envelopes unflavored gelatin
  • 1 cup cold water
  • 2 cups sugar
  • 1/2 cup light corn syrup
  • 1/4 tsp salt
  • 2 large egg whites
  • 1 Tbsp vanilla
  • lots and lots of powdered sugar!

Start by combining gelatin and 1/2 cup cold water in a large bowl.

Oil a 13×9 pan and sprinkle with a good amount of powdered sugar. This is so the marshmallow will not stick to the pan, VERY important step πŸ™‚

Combine sugar, 1/2 cold water, corn syrup and salt in a large pot with your candy thermometer attached to the side. Heat on low and stir until sugar dissolves. Then bring to a boils without stirring, until the temperature reaches 240 degrees. Pour into bowl with gelatin and stir until gelatin dissolves. Using a stand or handheld mixer, mix until triple in size and thick.

In a separate bowl, beat egg whites until they form hard peaks. Fold this and the vanilla into the sugar mixture and stir until combined. Pour mixture into prepared pan, smoothing it until it is evenly covered. Sprinkle the top with powder sugar. Allow to sit a chill for at least 3 hours.

Lick the spoon at your own risk: it is a hot, sticky, delicious mess!!!

When it is done cooling, carefully remove from pan. Lay out on a cutting board and use an oiled pizza cutter to cut into 1 inch cubes. Then roll in powder sugar to cover all of the sides and marvel at how amazingly fluffy these are!
