    Healthy Peanut Giveaway! 

    One of my favorite mottos is: Change is Healthy πŸ™‚ And right now, there is a lot of change happening!

    A new year is coming up. 2011!

    I am officially moved out of my little house in Athens!

    My sister Kay and her husband Tony are have a baby!!!!!

    It was a BIG Christmas surprise! They just moved into their house too! Perfect timing πŸ™‚

    And I have made a few changes to the blog!

    An updated name, a recipes page, and a new domain: healthypeanut.com!!

    To celebrate these changes and continue the season of giving, I am having my very first giveaway!!!

    For Christmas I gave my sister a candy thermometer so we could make marshmallows! Something we have always wanted to do!

    They turned out so light and fluffy, we were blown away!! These have totally ruined all store bought marshmallows for us! Good thing they are not too tough to make!

    Homemade Marshmallows

    adapted from Smitten Kitchen

    • 3 1/2 envelopes unflavored gelatin
    • 1 cup cold water
    • 2 cups sugar
    • 1/2 cup light corn syrup
    • 1/4 tsp salt
    • 2 large egg whites
    • 1 Tbsp vanilla
    • lots and lots of powdered sugar!

    Start by combining gelatin and 1/2 cup cold water in a large bowl.

    Oil a 13×9 pan and sprinkle with a good amount of powdered sugar. This is so the marshmallow will not stick to the pan, VERY important step πŸ™‚

    Combine sugar, 1/2 cold water, corn syrup and salt in a large pot with your candy thermometer attached to the side. Heat on low and stir until sugar dissolves. Then bring to a boils without stirring, until the temperature reaches 240 degrees. Pour into bowl with gelatin and stir until gelatin dissolves. Using a stand or handheld mixer, mix until triple in size and thick.

    In a separate bowl, beat egg whites until they form hard peaks. Fold this and the vanilla into the sugar mixture and stir until combined. Pour mixture into prepared pan, smoothing it until it is evenly covered. Sprinkle the top with powder sugar. Allow to sit a chill for at least 3 hours.

    Lick the spoon at your own risk: it is a hot, sticky, delicious mess!!!

    When it is done cooling, carefully remove from pan. Lay out on a cutting board and use an oiled pizza cutter to cut into 1 inch cubes. Then roll in powder sugar to cover all of the sides and marvel at how amazingly fluffy these are!

      This year was kind of a bust! I really didn’t bake like I usually do due to 1st trimester weird tastes and nausea. bummer! OR, on the flipside, caused less of a backside increase for me! πŸ™‚ ha!
      I did make my favorite peanut butter cookies w/ the hershey kisses on top…what are they called?!

      I’m so impressed! I’ve always wanted to make those marshmallows but never been brave enough.
      My favorite thing to make is fudge using the recipe from the back of the marshmallow creme jar. Simple, but always a favorite.

    Feasting on Macarons 

    Merry Christmas!

    I hope you all had a fabulous and blessed Christmas Day!

    Ours was relaxing. Filled with presents, games, food and SNOW!!!

    This is a big deal for us Georgians. The last time it snowed on Christmas was in the 1880s!! Β I am enjoying it while it lasts (later this week it is going to be in the 60s).

    Ever since coming home I have been super busy with work at William Sonoma, moving, visiting with friends and family, I haven’t really had the time to cook. It was our friend Jake’s birthday and we decided to make a birthday feast!

    First up was a white pizza made by Jake and my brother Charlie. They made the dough and sauce. We topped it with tomatoes, mozzarella cheese and spinach.

    With the leftover ingredients, Jake and I made calzones. There were a few holes in the dough that we patched up, this gave them a more artisan and rustic look πŸ˜‰

    Jake made Jerk Stuffed Pork, which were wonderful and spicy!


    Gus, Jake’s brother made a beautiful beet risotto!!

    This was all served with a side of seasonal sautΓ©ed green beans.

    For my contribution I made Macarons for dessert!

    Hot Chocolate Macarons with Marshmallow Frosting to be exact!

    In anticipation for my Paris trip in April, I want to perfect my macaron making skills.

    Hot Chocolate Macarons

    Adapted from hungry rabbit

    • 2/3 cup almond meal
    • 1.5 cups powder sugar
    • 3 Tbsp coco powder
    • 1 tsp cornstarch
    • Pinch of salt
    • 3 large egg white, at room temperature
    • 4 Tbsp sugar
    • 1 tsp vanilla

    Blend dry ingredients in food processor until fine, then sift mixture into a bowl.

    Beat egg whites in a bowl until foamy, then slowly add the 4 tbsp of sugar and beat until stiff peaks have formed. Reduce to low speed and add vanilla.

    Fold in the dry ingredients. And pour batter into a pastry bag (I used a gallon ziplock bag, pastry bag buried in moving boxes somewhere!). Pipe small circles onto a cookie sheet lined with parchment paper. Leave space between circles for them to rise. Allow filled sheet to sit at room temperature for about 15 mins to develop a little shell on the batter.

     

    Place in oven preheated to 350. Bake for 8 mins, rotate sheet and bake for 8 more until crisp. This is where you can peak in and pray for those macaron “feet” to appear. These are the ridges around the bottom, so far so good πŸ™‚ Allow macarons to cool on wire rack while you make your frosting.

    Marshmallow Frosting

    From Smitten Kitchen

    • 2 egg whites
    • 1/2 cup sugar
    • 1/4 cup light corn syrup
    • 2 Tbsp water
    • 1 1/2 tsp vanilla

    Combine ingredients in double broilers, beat with electric mixer while it is heating up. Beat until fluffy, then remove from the heat and beat until cooled.

    Pipe between shells…

    …or on top, whatever!

    Sips of the Season 

    This year I decided that instead of buying Christmas presents for my family, I am going to do something with/for them. I think it is more personal…

    …AND I am a poor college student! πŸ™‚

    I decided to take my dad wine tasting. Β This afternoon we went to the Chateau Elan Winery in north Georgia.

    We had a BLAST! The tasting started with a 45 min tour of the winery.

    We learned so much about the wine making process (and it is a process!) and specifically Georgia grapes.

    Chateau Elan’s speciality is Muscadine Wine, made from muscadine grapes which grow well in Georgia. It has such a distinct flavor, my dad was reminded of wild grapes he used to eat growing up. I was reminded of Β kids chewable grape Tylenol I used to have growing up (yum!)

    Our tour guide was 78 years old and oh so knowledgeable!! Wonder how many bottles of wine he has opened in his lifetime…

    They gave us chocolate as a chaser for the incredibly strong port wine!

    This evening I took my mom for her Christmas present adventure!

    We went for holiday magazines and fancy coffee drinks are the bookstore and Starbucks! We tried out the carmel brulee latte and hot chocolate. We were surprised that they actually were not too sweet. Just perfect!

    We started doing some research for our Christmas meal menus. Paula Deen’s mag and Paula Deen pen from when I visited her restaurant this summer in Savannah! Im a big Paula fan but I don’t think I have ever made one of her recipes!!

    After Starbucks we went driving around to see Christmas lights. We went by 2 houses in Alpharetta that have their lights set to music and you tune in through your radio! They also collect money to donate to Children’s Healthcare of Atlanta πŸ™‚

    We were blown away by the work put into these displays!!

    If you are in the Atlanta area, you should definitely check them out!

    Is there really only 3 days till Christmas!?!

    Slim Pickings 

    Yesterday was our 20 mile long run, a little (or a lot!) of rain and ice could not stop us!! I am so ready to run 26.2 through Disney!! Only 22 days to go!

    Bonk Breaker’s are my newest favorite energy bar πŸ™‚ I LOVE peanut butter and jelly. These are yummy and so easy to eat on the run!

    It is oh so nice to be home!!

    I have a tough time settling into vacation. Β I like feeling productive, and a morning with nothing to do can just about drive me crazy. So I found something to do…

    Peppermint Pretzel Slims

    Inspired by the Trader Joe’s version, which sadly the stores are out of!

    • Pretzel Slims (TJs or any other brand)
    • White Chocolate Baking Chips
    • Peppermint Extract
    • Candy Canes

    Crush the candy canes, very finely.

    That’ll do.

    Melt the chips in a double broiler and add in 1/2 tsp of peppermint extract.

    Dip one end of the pretzel in the white chocolate and crushed peppermint

    Then let them cool and harden up on a cooling rack.

    If you can resist them that long!

    I think that I would pick these over TJs any day! Home made treats are the bestest!!

    Only 1 week to Christmas!!!

    Twas My Last Night in Athens 

    And all through the house, boxes are packed and waiting by the couch..

    My clothes are all packed and the chimney is bare, just waiting for the moving truck, soon to be there.

    Its hard to believe that this is it!! I went for my last run along Millage Ave, I have put in many MANY miles on that road!

    I am definitely excited about a change though and starting my internship! Best of all…no more tests, no more midterms and no more FINALS!!! πŸ™‚

    I am leaving in the morning and meeting Lauren halfway at the Suwanee Greenway for our 20 mile long run!!! The forecast is in the 50s and RAIN! Im going to go ahead and pray for blue skies but pack the rain jacket just in case!

    I found this Ghirardelli Chocolate Peppermint coffee sample at Target and knew I needed to try it! I love the package πŸ™‚

    Oh I wish you could smell this!!

    I added a tsp of coco powder to the grounds for a little extra chocolate flavor (highly recommend!!)

    A drop of peppermint extra, sweetener and TJs soy milk creamer. This had me humming Christmas songs as I sipped πŸ™‚

    Studying and Samples 

    We are in mid-finals here in Athens, the streets are deserted and the coffee shops are standing room only.

    I can see the end. Tomorrow I have a final and turning in a paper. My last final is Tuesday, then break can begin!!

    To keep my spirits bright while studying, I have been making my list of all the Christmas goodies I want to make when I get home πŸ™‚

    My study spot of choice is Starbucks, and it you have ever glanced at my blog then you know that it is my favorite coffee spot πŸ™‚ I love the coffee, but they best part is the samples!

    Sample 1: Cranberry Orange Scone

    Sample 2: Banana Chocolate Bread

    Sample 3: White Chocolate Gingerbread Latte

    All amazing! They walk around and hand them out to us studiers (I think they feel bad for us). I collected these samples over a 5 hours period (Oh yeah, I was there that long!)

    This morning I started with a breakfast of champions.

    Peanut Butter and Jelly Oatmeal

    Another creation coming from an almost empty pantry.

    • 1/3 oatmeal
    • 1/3 cup vanilla Almond milk
    • 1/3 cup water
    • 1/2 banana
    • 1/2 tsp chia seeds
    • 1 tbs peanut butter flour (or you can use regular PB)
    • 1/4 cup frozen mixed berries (this is the jelly part, if I had actual jelly then it would have been amazing drizzled on top!)
    • Sweetner

    Heat oatmeal, almond milk, water and sliced banana on stove top. Stir until almost the consistency you want, then add peanut butter and chia seeds. The peanut butter will thicken it up a lot. Finally fold in the frozen berries, let them sit for a minuet to thaw.

    This was so tasty and so filling. Great study food πŸ™‚

    I took a study break and headed to the gym. I wanted to do something besides the treadmill so I hoped on the stairclimber. Holy Cow, such a good workout! 30 mins later and I was sweating!! I was not expecting it to be that tough. Good way to burn pre holiday calories and escape for an hour! Onward!

    The Empty PB Jar 

    This morning I enjoyed a fabulous breakfast in bed!

    Overnight Oats in a Peanut Butter Jar!

    Lauren and I decided to go for our long run at 8:30 so I set my alarm for 7:00 so I could eat a good breakfast before we headed out. And it was GOOOOOD!!

    I have a dorm style fridge in my room. I made the oats last night, I was ready with a spoon next to my bed for when the alarm went off. I only had to reach over and open the fridge!

    I am ALWAYS ready to eat right when I wake up. To have this already made was absolutely heaven! My room is also ridiculously cold, so I got to savor a few more minuets under the covers with my treat! Best way to start the day πŸ™‚

    After bundling up, Lauren and I braved the cold for our 14 miler around Athens!

    It ended up being a really nice morning for a run! This was my last long run around Athens 😦 I have a 5 miler next week and then Im heading home! Kinda sad, I have been running these roads for a year and a half just about everyday! But I am also ready for a change in scenery!!

     

    The story of my empty PB jar starts with me assessing my pantry.Β Now is the time when I have to start making those critical grocery decisions…exactly how many bananas should I buy to last me to moving day? How creative can I get with pantry items that I need to use up?

    These are the important things that are running through my mind when I should be studying…I am SO ready to be done!!

    In an effort to avoid studying a little longer and get rid of a few food items, I decided to make something sweet to bringΒ to a Christmas party. The food blogs have been blowing up with people raving about Mamma Peas Peanut Butter Chocolate Chip Dough Ball Cookies.

    I needed to try them out for myself. I closed my book, put the cap on my highlighter, and rounded up the troops!

    Peanut ButterΒ Chocolate Chip Dough Ball Cookies

    adapted from Peas and Thank You

    • 1/2 cup butter (I had Smart Balance)
    • 3/4 cup PB
    • 1/2 cup brown sugar
    • 3/4 cup powdered sugar
    • 1/2 tsp vanilla
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 3/4 tsp salt
    • 1 cup WW flour
    • 1/2 cup AP flour
    • 1/2 PB chips (I used butterscotch-NO idea why I have these!)
    • 1/2 cup chocolate chips (I used left over Hershey’s bars from Halloween)

    Combine butter, PB, vanilla, and sugars. Then stir, stir, stir!!

    Combine dry ingredients and add to the wet. Stir to combine.

    Add butterscotch and chocolate, then refrigerate for 30 mins while preheating oven to 350.

    Roll rounded tbs full of dough and place and baking sheet.

    Bake for 10-12 mins. Now what is so great about these???

    Not only are these delicious but they also finished up my PB for my overnight oats in a jar! Sweet πŸ˜‰

    Wintermint 

    Today was Fa-La-La-Freezing!! Not only was it frigid but it was windy!! I was forced to do my 5 miler on the treadmill.

    Now is the time when training for a January marathon is not looking like the best idea I ever had… Only for Disney πŸ™‚

    Today was also my LAST last day of school! Woo Hoo!

    Classes are over…finals have only just begun πŸ™‚

    I love studying at this Starbucks, they never disappoint with samples!

     

    When cleaning my room today, I came to the realization that I have a Trader Joe’s problem! πŸ˜‰

     

    Tonight the roomies and I had a little fun with some brownies and peppermint…

    • Candy Canes- Check
    • Candy Cane Joe-Joes’s- basically peppermint oreos…I KNOW!
    • Reduced Guilt Brownie Mix- because you know, gotta keep it healthy πŸ˜‰

    We combined the brownie mix with non-fat yogurt and 1/2 tsp peppermint extract. Divided half of the batter among 12 cupcake tins lined with paper. Top the batter with a candy cane joe joe. Top with the remaining brownie mix and sprinkle with crushed candy cane.

    Yummy!!! With a little peppermint surprise inside! And they are under 200 calories each! These really got me excited for Christmas cookie making when finals are all over!
