As I went for my run today, I had the thought that I should have saved my long run this week for today! 10 miles on 10.10.10! Thats an opportunity that comes around…NEVER! Kinda sad I missed it!

My day was filled with studying and papers, thanks grad school. But I did enjoy a study snack of a peanut butter and jelly Larabar πŸ™‚

It tasted just like PB&J and only has 4 ingredients!!Β 

With 2 of the 4 ingredients being dried fruit I was expecting it to be super sweet but is wasn’t at all! I definitely recommend and it filled me up for a while so I could continue to be productive…more or less πŸ™‚

After putting in some study time, I went grocery shopping!! I know Im crazy, but grocery shopping really is one of my favorite things. And being a poor college student I get really excited/ proud when I find a good deal. My favorite Fage greek yogurt was $1.60 off the normal price, SCORE! πŸ™‚

I think this is a record ↑, and I didn’t even buy that much!

OK maybe I did πŸ™‚ I have a mini fridge in my room because we have precious little space in the kitchen fridge that is shared between all the roomies.

I bumped up my 4 mile run to today since the our long run was on Thursday. It was a beautiful day! I smelled charcoal grills and tea olive flowers as I ran down Milledge. LOVE FALL!!

For dinner I made, wait for it…..

Sweet Potato Falafels!

I adapted the recipe from 101 Cookbooks.

  • 2 medium sweet potatoes (baked and skins removed)
  • 1 cup of chickpea flour
  • 1 1/2 tsp cumin
  • 1 tsp garlic gold
  • 1/2 tsp nutmeg
  • bunch of chopped cilantro
  • tbsp lemon juice
  • 2 tsp tahini
  • 2 tsp olive oil
  • salt and pepper

Pre heat the oven to 400. Add all ingredients into a bowl and mash until smooth. Spoon balls of falafel dough onto greased baking sheet. Bake in the oven for about 15 minuets or until firm and beginning to brown on the bottoms.

I dipped mine in my Fage greek yogurt!

Big week this week, lots of studying and papers due. This Saturday I am taking the CHES (Certified Health Education Specialist) exam at Emory in Atlanta. I have NOT studied, kinda beginning to freak out! And two weeks from today is the Athens Half Marathon!! Disney is right around the corner!!
