    Its Midterms! 

    ↑ Already!!

    Which means that I am retreating into my little study bubble for the next few days

    surfacing only for tests and training 🙂 Check out the new page that shows my training schedule for the Disney Marathon! I am in week 4.

    Although reading blogs is a great study escape, I don’t have time to post anything new (and not really anything exciting to talk about unless you want to hear about the plausibility of physical activity decreasing relative risk of coronary heart disease and ischemic stroke).

    I will be back in a day or two, until then I will leave you with a few pictures of those things that are pulling me through right now… (emphasis on coffee!)

    Dancing in September 

    Do you remember, the 25th night of September….

    Caroline and Nick’s wedding was last night and it was BEAUTIFUL!

    Caroline cut rosemary from her garden for the table decorations and bouquets.

    While waiting for the wedding to begin, Lauren and I admired a pear tree (yes I am wearing orange and blue, War Eagle!)

    But I am in Dawg country…

    I absolutely love chocolate covered strawberries, they are one of my favorite treats!

    And I was lucky enough to get one!!

    While I was at home on Saturday, I went running at Roswell Park which has cinder running trails. I like it so much better than running on the road!  The scenery was prettier, there was no exhaust, and I was not pounding the pavement. Because not all running surfaces are created equal, here is a list of the top 10 best running surfaces, so says Runner’s World:

    1. Grass

    2. Woodland Trails

    3. Earth

    4. Cinders

    5. Synthetic track

    6. Treadmill (ugh, I can’t do this one!)

    7. Asphalt

    8. Sand

    9. Concrete (10x harder than asphalt!)

    10. Snow

    First of Fall! 

    Today was the first official day of fall! My absolute favorite season!! Chill in the air, crunchy leaves under your feet, college football and pumpkin spice anything! Even though the temperatures were still in the 90s in GA I wanted to celebrate the changing season and do something with my newly found pumpkin!

    Enter pumpkin butter. I found this super quick and tasty recipe on Kath’s blog. You make the pumpkin butter in the microwave. While making mine, a delicious smelling breeze of pumpkin spice wafted out to fill our whole kitchen! This will be a staple in my fridge all fall long!

    I couldn’t wait long enough for it to cool, so I made a tiny shot glass dessert of praline almond milk ice cream, topped with hot pumpkin butter and some oats… ahhhh yum!

    It was melty and so delicious! The shot glass was good for portion control because I could have eaten a huge bowl of this!!

    The season is not the only thing changing! I uploaded a new photo for my homepage of what else, pumpkins! AND I have added another event to my ever growing training schedule. I just signed up to ride in a 40 mile bike ride next weekend called Pedal for Paws. The money raised goes to the Athens, GA True Love Canine Rescue organization. I did the event last year and it was a blast!

    It was the longest ride I have ever done (or have done since then!) there are food stops along the way and free food and beer waiting for you when you get back! Here is the new up to date training schedule:

    I am at home until Saturday morning so Lauren and I are doing our 5 miler on our own 😦 But I will be heading back to Athens Saturday for Caroline and Nick’s wedding!! Can’t wait, love love weddings!

    Little Things! 

    After a few productive hours of studying this morning, I decided to reward myself with a trip to the grocery store. Not only was my favorite cereal on sale…

    BUT the pumpkin is BACK!

    The ONLY place I have been able to find it is at the Whole Foods in Atlanta, and I have to stock up on my trips home.

    To avoid studying a little longer, I decided to try out making Kale Pesto. This is a shout out to my sister who requested more recipes that include kale.

    I wash about 4 large kale leaves and tear them into pieces. Put in a bowl with 2 tbsp of water, cover and microwave for a minuet.Drain and put in blender with 1 oz of goat cheese, a small handful of nuts (I used walnuts), 1 tbsp of apple juice, 1 tsp of lemon juice, salt and pepper.Blend and refrigerate. Hope you like it, maybe even Tony will try it 😉

    I used some later on my Black Bean Quinoa Burger!Which I enjoyed with baked sweet potato fries I made with my very own sweet potato!

    Later my 4 mile run was interrupted when I came across the Clarke Central High School homecoming parade!They were so sweet and so young! Class of 2014, whoa!!

    The ROTC were passing out candy to spectators as they went by.

    When I got home I noticed something red catch my eye from our deck…My pepper was a greenish brown yesterday and I though it was dying! I bought the plant at Earth Fare and didn’t know what it was suppose to look like. Can’t wait to use this little guy for something tasty and probably very spicy!

    Tailgating ≠ Rest Day 

    My parents came into town this weekend for the UGA vs Arkansas football game. I love when the parents visit they bring me things…And leave me things… Thanks mom and dad! They also take my brother and I out to dinner. Friday night we enjoyed pumpkin beer at Trapeze and Cecilia’s cake at last resort. I am not usually a big cake fan but Cecilia’s cake is a must when visiting Athens!
    We enjoyed walking around and experiencing gameday at UGA before meeting my friends at our tailgate.I love college football Saturdays, but I have decided that Tailgating ≠ Rest Day!

    About to head out for my 4 miler. I am looking forward to getting out, I have been studying all the day long and my brain is toast right now!

    I made myself a little pre run treat using my new jar of TJs sunflower seed butter (thanks mom!)I toasted up a whole wheat english muffin and topped with:

    Sunflower seed butter- I love the intense flavor so a little can go a long way!

    Greek yogurt

    1/2 banana

    Drizzle of agave

    and sprinkled with chia seeds!

    Im off for my run, hopefully I will come back with enough energy to put in a few more hours of studying…

    Green Goo and Long Run Two!! 

    Today we did our second long run, 7 miles! To fuel up for the run I whipped up a bowl of Green Goo!

    It is the best pre work out snack!

    Start with a frozen banana cut into pieces and then place in a blender with frozen chopped spinach.

    Add vanilla almond milk to the blender and blended until it is smooth and a good consistency. I love the vanilla flavor that the almond milk adds but you can also substitute milk. I topped mine with some oatmeal and chia seeds! Yummm….

    We ended up going for our run at 9:00 PM. I love night runs, you can get into your own little running bubble and fewer people are on the roads. I big THANKS to Dunkin Donuts who gave us a free cup of water when were we out and getting a little dry.  Lesson learned, time to strap on my running water bottle!

    but wait, there’s more! 

    After classes today I met a friend downtown and stopped by the Athens Farmers Market!

    I love the market, all of the farmers are so friendly and willing to share their expertise on gardening. I got some advice on my container garden from the growers of these BEAUTIFUL heirloom peppers!

    The flowers were so COLORFUL!

    When I got home I decided to harvest a few of my sweet potato plants. I have been growing a few plants in our front yard, I dug up one a while ago and they were still pretty tiny. I thought I would give it another try!

    I dug and I pulled and I lifted up…two TINY sweet potatoes! Bummer!

    But Wait!

    A little further down I came across another spud!

    This one was a keeper! Can’t wait to make something tasty with these!

    I am mixing up the marathon training schedule this week. Which is fine as long as I get it all in! Monday was such a beautiful day I felt like a longer run so I ran a fabulous five miles and swapped my 3 miler for today. Have I lost you yet? And since Lauren is leaving for Auburn on Friday (for College Gameday! War Eagle!) we have decided to do our long run on Thursday night. I have updated my schedule to keep me straight!

    Halfway into week 2! Watch out Orlando!

    Pumpkins on my mind! 

    Today I woke up feeling a little under the weather. I got some homework done and went for a walk later in the day.

    After my pumpkin spice latte experience, I have pumpkins on my mind, it makes me feel like fall is almost here!!

    I had a fantastic snack of greek yogurt, blueberry pomegranate syrup and homemade granola.

    For dinner I made a lentil soup with spaghetti squash and pumpkin yogurt topping.

    The soup was pretty thick, I actually ate most of it with a fork!

    Lentil and Kale Soup

    The base of the soup is from 101 cookbooks, with a few modifications.

    Soup

    1 cup of cooked lentils

    1 onion

    1 28oz can of diced tomatoes

    1 can of chicken broth

    1 cup of water

    3 cups of chopped kale (or any other leafy green)

    Salt

    pinch of cinnamon

    pinch of all spice

    lemon juice

    Pumpkin Greek Yogurt

    1 tbsp greek yogurt

    1 tbsp canned pumpkin

    pinch of curry powder

    Heat onion in pot until soft. Add all of the ingredients except for the kale. Bring to a simmer and then add kale to pot. Once kale is wilted, serve over spaghetti squash and top with pumpkin yogurt and chia seeds. Yummm!

        If you have any more recipes using kale make sure to post them. I like it a lot but sometimes have a hard times finding good recipes..

    My “off” day 

    Today was suppose to be an off day after our first long run yesterday, BUT after sitting around the house all day watching UGA and Notre Dame lose in football, I needed to get out and see some sunshine!

    In a quest to avoid the environmental toxins on Milledge, I wound up at Bishop Park. I have only been there for the farmers market on Saturday mornings but I heard there was a paved running trail. It was a short trail but actually a really nice place to run.

    Somehow I ended up on Prince Avenue and passed this rock by the Navy School.

    Lauren and I tried out this new restaurant in Athens called Graze, I had a draft beer called Son of a Peach. It had a sweet peachy flavor, perfect for an end of summer drink in the peach state!

    I also had a Caribbean Jerk Tofu salad and a grilled BBQ tofu burger. So delicious, one of the reasons I love eating in Athens, there is always a veggie option!

    We decided to call it a night after Alabama beat Penn State in football 😦

    Long Run ONE! 

    I am coming to the end of my first week of training for the Disney Marathon!

    My roommate Lauren and I thought that the best way to distract us from our last semester of grad school is to devote endless hours and miles to training for the most magical marathon around!!

    We are using Hal Higdon’s 16 week marathon schedule. I used it when I was training for my first marathon – Chicago 2007. I made a few modifications to combine the beginner and intermediate plans. I have done one marathon and a few halfs so I don’t consider myself a beginner, however I don’t know that I am ready to take on the title of “Intermediate”.

    Here is my schedule:

    As you can see I have planned a few other events for this semester…so long GPA! But Athens is having its first half marathon ever (have to participate) and what better way to earn your turkey on Thanksgiving then running 13.1 miles?!
    Back to today:
    Lauren and I woke up ambitiously early to put in our first 6 mile long run. Beautiful morning along Milledge Avenue, breathing in the commuters exhaust…alright so we will need to find a new place to run!
    Then on to a full day of studying, I do want to graduate at some point. I packed my bags and headed to Starbucks for the seasons first PUMPKIN SPICE LATTE!! The best post race treat!

    I followed up with a hummus wrap and my absolute favorite thing…greek yogurt! I sprinkled on some homemade granola (still perfecting the recipe, stay tuned).

    Then I sat back, opened my health policy book, and enjoyed the beautiful day. The best part is, I don’t have to worry about when I’m going to fit in a run later. What a great day!
